Ingredients:
1 pound fresh asparagus, gently steamed
1/3 cup finely chopped green onions including some green top
1 minced garlic clove
1/3 cup chopped Roma tomato
2 Tablespoon light mayonnaise
1 Tablespoon fresh lemon juice
1/2 teaspoon salt
3/4 teaspoon minced fresh cilantro
1/4 teaspoon chili powder
6 drops hot pepper sauce
Assorted raw veggies, crackers or baked tortilla chips
Directions:
Place chilled cooked asparagus in blender or food processor with garlic – process until smooth. In another bowl, combine the tomato juice, salt, cilantro, chili powder and hot pepper sauce. Stir into asparagus mixture until well blended. Chill . Serve with veggies and chips.
