Beef Stew Provencal


1 cup red wine (Minnesota if possible, try Cannon Valley Winery)

1/2 package Thousand Hills round tip steak, cubed

1 whole carrot, chopped (local)

1 whole onion, chopped (local)

1 tablespoon garlic, minced (local)

1/2 cup olive oil

2-3 sprigs fresh thyme

1 whole bay leaf

1 teaspoon sea salt

1 teaspoon black pepper


Combine all ingredients in non-reactive container (ceramic or heavy plastic) and marinate overnight.

Place in a stock pot and bring to rolling boil. Reduce heat and simmer for 1 1/2 hours.

Serve immediately.
