Beef Stew Provençal

This stew has such high cuisine taste but is so simple to make that people will swear it was from Julia Child herself!


½ lb beef, cut into bite size pieces
3-4 carrots, chopped in 1 inch pieces
3-4 onions, quartered
2-3 stalks celery, chopped in 1 inch pieces
2 bay leaves
5-6 stalks fresh thyme
½ cup olive oil
1 bottle red wine
1 teaspoon salt
½ teaspoon black pepper


Combine all ingredients in non reactive pot or container and marinate at least 12-24 hours. Pour into stock pot and bring to boil; reduce heat and simmer for 1 ½ -2 hours. Serve.
