Blueberry Pie

Ingredients for cookie crust:

1/4 cup soft margerine

1/4 cup sugar

1 egg yolk

1 cup flour

Ingredients for Filling:

3 egg whites

1/3 cup sugar

2 pints blueberries


Preheat oven until to 400 degrees.

Mix the margarine, sugar, and egg until well blended then cut in the flour until crumbly. Bake for five minutes (check to make sure it doesn’t get too brown).

Reduce heat to 375 degrees.

Beat egg whites with a whisk until stiff. Mix sugar and berries and fold into the eggwhites. Gently scoop mixture into cookie crust.

Bake on the lower rack of the oven for 40 – 50 minutes.
