Boiled Red Potatoes with Herbs

½ lb red potatoes (local)
3-4 tablespoons butter (local)
½ bunch scallions (local)
½ bunch parsley (local)
Salt and pepper to taste


Bring water to boil, add potatoes and boil for 25-30 minutes until potatoes slip easily off of knife when pierced. Drain and cool for about 5 minutes. Cut potatoes in half or quarter depending upon the size. Add butter, scallions, parsley, salt and pepper. Serve.
