Fried Chicken


1 lb Breasts, skinless and boneless (Kadjean Chicken (MN)

1 cup peanut oil

1 cup milk (organic valley, Cedar Summit)

1/2 cup whole wheat flour (While Grain Milling Company Flour)

1/2 cup rolled oats (Whole Grain Milling Company Flour)

1/2 cup oat bran

1 tablespoon Flax Seeds (Whole Grain Milling Company Flour)


Pound chicken breasts to flatten; cut into 2 by 2 inch pieces. Combine flour, oats, oat bran and flax seeds. Dip chicken in milk and then in grain mixture. Allow chicken to rest on paper towels or dish towel for 15 minutes. Heat peanut oil in fry pan over medium high heat, but do not let oil smoke. Fry chicken in batches and drain on paper towels. Salt and pepper and serve immediately.
