Multicolored Mayonnaise-Free Coleslaw with 3 Dressing Options

Embrace the “lettuce” of late summer and try these beautiful salads!

Ingredients:

1 head red cabbage, shredded (local)

1 head green cabbage, shredded (local)

4-5 large carrots, shredded (local)

½ bunch scallions, chopped (local)

½ bunch parsley or cilantro, chopped (local)

Balsamic Dressing

3-4 cloves garlic, minced (local)

1/2 cup balsamic vinegar

1/2 cup olive oil

1 teaspoon Dijon or coarse mustard

Salt and pepper to taste

Fiesta Dressing

3-4 cloves garlic, minced (local)

1/2 cup lime juice

1/2 cup olive oil

½ teaspoon cayenne pepper

Salt and pepper to taste

Asian Dressing

1-2 cloves garlic, minced (local)

1 inch fresh ginger, peeled and minced

1/2 cup rice vinegar

1/2 cup sesame oil

Salt and pepper to taste

Instructions:

Combine vegetables in large bowl. Toss with preferred dressing. Use Cilantro with Fiesta and Asian Dressing as desired.
