Ingredients:
1/2 box Spaghetti (Dakota Growers (ND)
1/2 package Peas, Carrots and Corn, frozen (SnoPac (MN)
1/2 package Broccoli, frozen (SnoPac (MN)
1 cup vegetable broth
1/2 onion, chopped
1 tablespoon Olive Oil
1 teaspoon salt
1 teaspoon pepper
2 tablespoons parmesan cheese (optional)
Instructions:
Cook spaghetti as directed. Meanwhile, sauté onion in olive oil until translucent. Add defrosted vegetables to pan and stir fry for 3-5 minutes. Add vegetable broth and cook on high for 3-5 minutes. Immediately pour over cooked pasta and toss with cheese if desired. Serve immediately.
