Baked crust, See Tef Crust
1 cup onion, chopped
1 1/2 cups spinach, cooked and chopped (or one package of frozen spinach, defrosted)
1 tablespoon olive oil
2 cloves garlic, minced
3 eggs, well beaten
1 cup milk
1 cup grated cheese (gruyere, swiss, cheddar, mozzarella)
1 teaspoon salt
pinch grated nutmeg
Preheat oven to 4000. Sautee onions and garlic in oil until translucent. Add greens to pan, and cook on medium heat until thoroughly heated. Remove from heat and set aside.
Mix milk with beaten eggs, add cheese, spinach, salt and nutmeg. Spinach requires plenty of salt, so taste and add more if necessary. Mix well and pour into crust. Distribute vegetables evenly and bake on middle rake of oven for 40 minutes or until a knife inserted in the middle comes out clean. Allow to cool on cooling racks for 10 minutes and cut and serve.
