Ingredients:
2-3 large parsnips (local)
1/4 cup olive oil
1 teaspoon salt
1 teaspoon pepper
Instructions:
Preheat oven to 350 degrees. Wash parsnips and peel; chop into 1 inch pieces. Toss with olive oil, salt, and pepper and spread in one layer on cookie sheet lined with foil. Bake for 30 minutes or until tender.
Serve immediately
