Zucchini Chocolate Cake


3/4 cup softened butter or margarine

2 cups sugar

3 eggs

2 cups grated unpeeled zucchini

2 teaspoons grated orange peel

2 teaspoons vanilla extract

1 teaspoon salt

1 teaspoon ground cinnamon

1/2 cup milk

2 1/2 cups flour

1/2 cup cocoa

2 1/2 teaspoons baking powder

1 1/2 teaspoons baking soda


Preheat oven to 350 degrees

Beat the butter and sugar together until light in color.

add eggs, orange peel, vanilla, salt, and cinnamon. Add the rest of the ingredients and mix 2 – 3 minutes at medium sped. Pour into greases and floured 12 inch Bundt pan.

Bake for 50 – 60 minutes or until toothpick inserted in center comes out clean. Coll before removing from pan.

When completely cool, sprinkle with sifted powdered sugar or drizzle with a glaze made of 3/4 cup sifted powdered sugar, 1 Tablespoon orange juice, and 1/2 teaspoon grated orange peel.
